Over the long weekend, I thought I would do some ‘Australia Day’ baking. I had not had lamingtons for ages so thought I would give them a try..with a twist. For all my International readers, lamingtons are a sponge cake coated with chocolate and rolled in coconut. For something different I decided to make the icing red velvet. You could also do the opposite with red velvet cake on the inside and white chocolate and coconut on the outside. I used this recipe and then added a 1 tablespoon of red food colouring to give it that red velvet feel.
